  • To taste: salt and pepper

  1. Pre-heat your oven to 200degC or 400degF. Toss potato cubes, olive oil, pepper, and salt. 
  2. Sauté in olive oil the onions and garlic until they’re soft. Add the diced toms and smoked paprika. Simmer until thickened, about 10-15 minutes.
  3. Serve the crispy fries topped off with tomato sauce and garnished freshly with parsley.

Indian Aloo Gobi

  • 3 large potatoes, peeled and diced

  1. Heat oil in large pan. Add cumin seed. Once they have started to splutter add the onions garlic and ginger. Saute until golden brown.
  2. Add the tomato, turmeric powder, ground coriander, and some salt. The tomatoes should be cooked until soft.
  3. Put the potatoes in. Stir well. Put a cover on. Sauté the veggies for a while on medium heat or until they are soft.
  4. Right before serving, sprinkle some garam masala and add some fresh cilantro as a garnish.
